These are seriously so good! A girlfriend of mine (who was due with baby #3 a few weeks before me) and I made muffins and exchanged weekly before our babies arrived. It was such a great way to divide and conquer so that we could have more variety in the muffins we stored up for those sleepless days. Best of all though might have been how it brought about the discovery of this gem! These are like dessert and yet with so much hidden goodness.
SUGGESTIONS
You can make the recipe as written! These are just a few personal recommendations:
I substituted a gluten-free flour for the whole wheat flour. If your family doesn't need gluten free though, I would bake it as written. Next time I will try half oat flour and half gluten-free.
These are delicious but decently sweet, so I have cut back the coconut sugar to 2 Tablespoons (1/8 cup) and still thought they tasted great!
I use a full-fat, plain Greek yogurt to bulk them up a bit. Both for breastfeeding and my kids, I like for them to have a bit of added fat.
SUBSTITUTIONS
Although I have not tested every ingredient substitutions myself, these are suggestions that other families have historically said they used successfully when swapping out ingredients.

Gluten/Flour: You could also make this with all purpose flour or use a mix of 1/2 cup (60 g) whole wheat and 1/2 cup (60 g) all purpose.
Sweetener: You can sub this with regular brown sugar
