If your little one is learning to like muffins and/or sweet potatoes, consider this the perfect collide! These muffins are sweet and delicious and yet also packed with sweet potatoes! You can easily cut down the sugar, sprinkle a teensy bit on top, and help your child enjoy sweet potatoes in a new way! Just be sure you aren’t “sneaking” the sweet potato. Especially amidst a season where they are often available and may be out on the table at Thanksgiving, we want our kids to learn to like this food - be it from mashing the potatoes, mixing the muffins, or eating a fresh baked one with the sweet potato knowingly inside of it!
SUGGESTIONS
Before Baking
Sweet potatoes are not the same as yams, and there are different types of sweet potatoes. Ideally, use sweet potato with tapered ends and a bright orange flesh.
Cook the sweet potatoes a day ahead or even a few hours before so they’re completely cooled and easier to peel.
This recipe calls for three very large sweet potatoes or 4-5 small/medium size. Aim for about 3 cups, but if you come up short you can add mashed banana.
I prefer to use avocado oil in this recipe as a neutral oil option.
SUBSTITUTIONS
Gluten-free: Gluten-free flour and/or a combination with oat flour works well in this recipe.
Egg-free: flax eggs work well in this recipe
Can omit sugar entirely, reduce by half, or try 1 cup of prunes instead if you want to reduce added sugar but still have them taste a bit sweeter.
