While I am not a fan of “sneaking” veggies in my kids food, you better believe I love getting extra veggies in as many ways as we can. So although the name might make you a bit leery about adding spinach to these, I promise you my dear friend here has a winner with this one! Call them dinosaur muffins, Grinch muffins, Hulk muffins, Tinkerbelle muffins, Shrek muffins…you get the point. There are many ways to help your children learn to like spinach, including making these!
SUGGESTIONS
You can make the recipe as written! These are just a few personal recommendations:
I used regular mini chocolate chips because those are what we had on hand (this makes the muffins not dairy-free, however). These ones by Enjoy Life (affiliate link) are a good option though if you want to keep the muffins completely dairy-free based on your family's food preferences and/or dietary restrictions (just be sure the milk you choose is also dairy-free).
With all this muffin baking, I finally had to order more muffin liners! These are my favorite parchment paper muffin liners, but I also use these silicone muffin liners (both affiliate links). Either option work best when baking with oats too, as used in this recipe. Other liners will have the muffin stick more, so take note before putting this batter into standard muffin liners.
