With healthier ingredients than a traditional muffin, I love how substantial this pumpkin one is. It has fat, fiber, and protein, which makes for a more satisfying grab and go breakfast or snack.

 

SUGGESTIONS

Before Baking

  • Can make your own pumpkin puree but canned is perfectly fine (and what I always use!). Just look for BPA-free cans, when you can.

  • If you don’t have a food processor, pulsing the oats in a blender to make them into an oat flour then hand mixing with the rest of the ingredients works out fine.

  • Can use honey instead of maple syrup. Just watch cooking temps and time as sometimes honey will burn easier!

  • Bake the batter right away! If you wait a long time between mixing up the batter and baking, the oats will absorb a lot of moisture and the muffin texture will get gummy.

  • Anytime you use oats instead of traditional flour, use silicone muffin pans or liners or parchment paper muffin liners. Typical muffin liners will waste a lot of muffin when you try to peel them off.

 

SUBSTITUTIONS

  • Gluten free: replace regular oats with gluten free oats

  • Dairy free: Can use coconut, soy, almond, oat, or cashew yogurt, applesauce, or mashed banana in place of yogurt

  • Egg free: to make flax eggs use 1 tbsp ground flax seed and 3 tbsps of water, and let sit for 10 min.

  • Nut-free: as is, no changes needed
